Beef or Venison Carbonnade Stew

Tonight the taste cop comes to my house, I dare not grill, normal fare will be too easy a violation so I am going with Carbonnade stew made with Chimay Blue.  If I've got it, which I don't at this time of year, I go with venison, the hams.  Since deer season is just around the corner then I'll have to go with beef.  I will post the link to the website I got the recipe from but here are a few things I add that they don't.  Serve with homemade mash potatoes, a big dallup right in the middle of each person's bowl.  Garnish with fresh basil, and if you can find it a good tasting tomato, just a slice.  Also serve with toasted, buttered sour dough bread.  And as the recipe suggests serve with the ale you cooked with.Carbonnade Stew Recipe
